Quality assessment of gluten-free foods with a focus on pastries

The topic of this thesis is the production of gluten-free bread from naturally gluten-free flour, which will be enriched with suitable additives that will increase antioxidant activity and naturally effect on the structure of the pastry, so it will meet the sensory requirements of final consumers. The literary part define, which proteins can be found in cereals, what does the gluten means, its function in the pastry and which diseases can cause. In connection with these diseases, a gluten-free diet for improving the patient's health and suitable foodstuff are briefly described. The literary part is concluded with the theory of sensory evaluation. The practical part deals with the production of naturally gluten-free breads enriched with ingredients from kitchen onions (Allium cepa L.) and subsequent sensory evaluation of this bread. Selected statistical procedures were used to obtain, processed and evaluated data. Antioxidant activity was also monitored and evaluated. By using texture-meter was find out, what effect has additives on aging of gluten-free bread.

Discourse functions of imperative "look" and "listen" in comparison with their Czech counterparts

The present paper studies the English imperatives look and listen used as discourse markers. The study focuses on two aspects: firstly, to identify the factors indicating the primary function as opposed to the discourse function of look and listen in English, and secondly, to analyse the Czech counterparts of these verbs used as discourse markers. The paper is comprised of two main parts. The first, theoretical background, describes the grammatical form of the English imperative with focus on look and listen, the concept of discourse markers, the cross-linguistic studies focusing specifically on look and listen, the correspondence between English and Czech imperative, and the potential Czech counterparts. The second, empirical part analyses two hundred and three examples of the imperatives look and listen and their Czech counterparts from the parallel translation corpus InterCorp. Eating disorders constitute weighty corporate problem. Frequence their occurrence in population records always bigger growth. Each year is in Czech republic hospitalized at average 500 patient with mental anorexia. Public is effected modern diets that the no matter what already exploited from reducing reasons or for reasons by other digest on Czech soil boom comparable with others European countries. Presently one for many reasons fear from thickness is muck - raking obesity. World revue - bis to us like pattern eye - appeal push in skinny girls. Emaciated lady's attacks on girls at puberty from posters, envelopes magazines also television advertisements. No wonder that the girls thorough sensitive period sees selves themselves as unsightly, thick and hence unsuccessful. From effected research is perceptiblethat the media, also society, work life above all young girls, but on rise anorexia always partake several factors, hence come short of only pressure public.
